Cheese Wizards – Still Casting Spells

Since launching in 2012, Cheese Wizards is still going strong on the streets of Seattle.  Back in the day, I visited the truck at least once a week.  These days, I rarely get to see the truck since I’m not near their weekly route.  Recently, I checked my Twitter feed, saw they were nearby, and took a detour to grab a bite to eat.
Over the years, I’ve seen the evolution of their sandwiches, tomato soup, and desserts.  I would be lying if I said I didn’t grieve the loss of some of my favorite menu items.  That being said, I’m always satisfied after a trip to the truck.  
 
The Forest-Lord
 
Currently, grilled cheese sandwiches are being served with a side salad and your choice of sauce.  The bread is grilled to a perfect golden brown.  This is not a greasy sandwich; this is pure artistry at work.  On this particular day, I had The Forest-Lord with a base of creamy dill havarti, mozzarella, tomatoes, basil and balsamic pesto aioli.  Of course, I added bacon.  To finish it off, I dipped it in Wizard’s Fire sauce pulled from the Ark of the Condiment.  As always, I found myself regretting that I don’t visit the truck more often.  It’s hard to imagine a more flawless grilled cheese.  The flavors are expertly paired.  The contrast in texture of the toasted bread and soft filling makes an ideal bite.  Even as I write this, I’m craving another taste. 
 
Wouldn’t it be great to find this cheesy goodness at a bricks location?  Wish granted!  The Wizards have reported that they will be opening a new café located at 3204 15thAvenue W.  The soft opening is scheduled for June 7th with a hard opening to follow a week later.  Can’t wait to visit!!!

 

A successful food truck requires a balance of delicious food and great customer service.  Owners Bo and Tom Saxbe have always excelled at both.  The Wizards always make me feel special with their creativity, humor, and willingness to go the extra mile.  I have, and always will be…spellbound by Cheese Wizards.
